Let me present to you, the easiest dinner EVER!
The kids are THRILLED when I set this on the table.. So much so, that Ben becomes ridiculously excited when he sees these ingredients coming together..
He was watching me get stuff out of the fridge and started recounting.. “Cheese, Green onions, bacon.. chili.. OMG MOM!! ARE WE HAVING?!?!?”
“Yes!” I Said.. “We are having Baked Potatoes”
“SWEET!!!” He yelled through the house as he started dancing around the kitchen!
- Baking Potatoes – 1 per adult/teen, 1/2 per kid
- Grated cheddar cheese
- Sliced onions or LOTS of chives
- Crumbled bacon
- Greek Yogurt (instead of sour cream)
- 1 can of STAGG Garden Chili (It’s good trust me!) or have this dinner the night AFTER homemade Chili night and you’re good!
You can either buy the pre-wrapped baking potatoes or you can wrap each potato in foil yourself (If you do that – use LARGE Yukon Golds). Put them in the oven at 425 for an hour. Get the rest of the ingredients ready and heat up the chili.. Serve.
See?! Super Simple. It’s VERY filling and UBER deelish!
