We went to the Green Living Show on the weekend and were treated to a myriad of DELISH food. Organic, locally grown, sustainable etc. etc.
As a family who has a boy (Mr. B.) who eats ALL. THE. TIME. My biggest concern is affordability AND taste. It’s gotta be affordable so that I can feed his face, and it’s gotta be yum-o so that the rest of us can eat it and he can have leftovers..
Enter PC, Olympic Yogurt & Epicure Selections and “WE’VE GOT A WINNER!!!”
SUPER Quick, I tossed together the following and set aside…
- 1 Cup – Olympic Organic Coconut Yogurt
- 1/2 cup PC Blue Menu All Peanuts Crunchy Peanut Butter (I’m sure Soy Butter would work too)
- A dash of Kikkoman’s Tamari (Aged Soy Sauce – SOOO Good!)
- Two Tsp of Epicure Selections’ Satay Spice
While that was sitting, I sauteed some chicken, some smashed garlic and fresh green onions from our greenhouse.
I cooked some jasmine rice and then steamed some green beans and flopped it all into a bowl, topped it off with chopped cilantro and voila – honestly about 15 minutes and dinner was served.
Mr. B. wolfed it down (no surprise really), Ms. E. loved it and well.. the adults were scrounging for more as well 😉
My fave was that it was super quick.. not even easy (even though it was), this recipe could easily be adapted to using whatever nut/soy butter you have on hand and mix with a “slightly” flavored yogurt (or even coconut milk).
A hit for sure, this one will definitely go down in our family cookbook!
